I have to say though that the one Chinese dish that I eat all the time is MaPo Tofu. Pure comfort food. Spicy, meaty goodness. Make it at home using venison and extra firm tofu. The braised tofu picks up the all the spice and is just delicious. Nothing like the tofu that folks toss out on a salad bar.
Here's a sad but funny. Our old shop in Warner Robins was next to one of the bigger Circle K stores and they had egg rolls on the heated rollers next to hot dogs . Those convenient store egg rolls were bigger AND better than the ones I've had at two local buffets and take outs. But the problem is lately they hardly ever have them.

Not Chinese, but Japanese. Get yourself some of this and put...it....on....EVERYTHING! Big bottles at Costco.

Chicken & Broccoli in General Tso's sauce (No dark meat and not deep fried), Mongolian Beef, Fried Pot stickers, Crab Rangoon and Hot & Sour soup. Oh, and of course, shrimp rolls, egg rolls or spring rolls
