Any ideas on how to make a custom buttstock spacer? HELP NEEDED

Not sure of the purpose of the spacer. Is it purely cosmetic or do you need the 3/8s for the perfect length of pull? I did a build to turn a standard birch stocked model 11 into an old school classic styled bolt rifle a couple of years ago. I used a plastic sheetrock mud bucket to make a couple of old school classic style white line spacers. It turned out pretty darn good and nobody knew I had a little time and exactly $0 in the spacers.
Check out the grip cap and recoil pad. Is this sorta what you had in mind?
Aluminum is soft. I'd ditch the angle grinder idea and work it with a file and sandpaper, maybe start with a dremel and a grinding wheel just to get it sorta close. Do a little at a time and trial fit often. Thin aluminum stock is not that hard to find in common household items. May even have some stock at a good local hardware store.
