Bought a small one just after thanksgiving and encased it in butter. Sat in the fridge until Christmas morning when I tossed it on the smoker for 4-1/2 hr, then seared in the oven at 500 for 6-8min. Probably my 4th or 5th Christmas doing it the same way.
