    irrelevant as are most things from Texas. I'm certainly not going to take food advice from a region that considers Brisket to be the pinnacle of Barbeque and spells it BBQ. Real Chile is spelled with an "E" and comes in Red or Green.

    We keep a variety of stubs stuff at the house, but my personal opinion is that sauce is only used on poorly smoked meat. If you see me putting sauce on, then the meat is trash.

    Over the top can be amazing, or it can be heartburn tomato soup. Most the internet recipes for OTT are a bowl of indigestion.

    yep. I find myself crock potting them more often than smoking anymore.

    Season the crap out of the meat, whatever it doesn't want will fall off in the fire. Top with green chile and cheese.

    Double meat angry whopper. Throw the bun away and use the meat for a bun with the veggies between them. Only fast food burger I will eat and actually enjoy.
