We had a calf butchered this spring. I had them leave the shanks, cutting them into 1 1/2 inch slices. Seared 4 the other night, threw in some garlic, beef base and capers, put them in a crock pot, deglazed the pan with some red wine, added a can of tomato paste and poured over the shanks. Threw in a pound of button mushrooms, about a half dozen shallots. A little dehydrated onions, Greek seasoning. Let simmer in the crock pot til the next day. May have been the best beef I have ever had. The collagen broke down, the marrow melted out of the bones (think beef flavored butter). Juicy, falling off the bone tender.
Italian beef sandwiches for leftovers. It's a shame they only have 4 legs.
