By and large, the guys doing this are not what I would call professionals. Usually good old boys hired for the season or the week, and speed is way more important than accuracy.

Some are better than others.
 
I dont generally weigh the meat I get back, but the two bucks I got last year were both a little over 200lbs live weight and the meat I got back dang near filled my 7 cu ft freezer.
 
I know people think a 100# doe will fill the freezer,I processed for 20 years and those that asked where the rest of there meat went.i politely told them they need to find another processer.i only processed quartered and in a cooler averaged about 300 year.i weighted many before and after and about 25-30% back.i think a hanging processer should return about 3 -5 % more with having whole deer
