So to be clear, you cook the squash for an hour. Sear the loin, then cook on top of the squash in the oven for 20 more minutes.

Yes, I also season the squash with a bit of nutmeg and mace, I think I left that out. Be sure to let it rest for 10 minutes or so before slicing.

That's the perfect doneness. Venison is so easy to over cook. It looks awesome.
