Venison chili recipes. Post 'em up.

I know everybody has one.

I'm getting ready to make some and like everything, a fair amount of 'winging it' will ensue but I need to get better about sticking to recipes and getting a written reference for my much cuter better half. That woman REFUSES to cook anything without following a recipe. She could cook the same thing 1,000 times and she will STILL read each step as she goes along.
Me, I'm flinging seasonings and utensils and stuff is flying all over the place. Never exactly the same but always awesome. :D

So anyway, I guess this is ultimately for Mrs. GeauxLSU. I'll try a couple of the best sounding ones and whichever the crew likes most will get printed and added to her seemingly endless volumes of printed recipes.

So what say you, what is your favorite/best venison chili recipe?
 
simple but not too bad,
1-2 lb ground venison- browned then add
4 cans Rotel hot tomatoes
5 table spoons, or as preferred of Chili Powder
1 teaspoon Cumin
1 teaspoon Garlic powder/etc
1 large onion diced
2 cans kidney beans or preferred kind, any work
teaspoon Tabasco, or 3 of anything else
shot or 4, Bourbon
teaspoon sugar
water if needed for more soupyness
boil low, 10 min, simmer 30,
add cornbread, chow down

Does the Bourbon go in the Chilli or the Chef?

Whatever recipe you use, it better have the Cajun holy trinity in there somewhere. (Onions, bell pepper, celery)

Get oil hot ,throw in onions, give it a minute then throw in meat .

Put mater's & jalepeno materz into boiler with beans . Add salt & chili powder.

Put meat & onions in. Add cumin & favorite hot sauce !
