Tips for wings on Recteq


 
Wings on the RecTec are easy to make.
1 break wings into 3 parts
2 heat grill to 260
3 put salt,' seasons, and BAKING POWDER on skinless side.
4 put on grill fat side up and repeat salt, seasons and baking powder.
5 cook for 30 minutes
6 turn grill to 460 for 55 minutes, don't open or flip.
7 when time is up, pull off grill and eat.

I have made 100s like this and baking powder is the secret to crisp wings.

Heard about using baking powder, supposed to make them crisper. Definetly going to try it. Thanks for the nice simple recipe and detailed instructions. ;)

I've made at least 1000 wings this way and never had them turn out bad. Couple things to make them better. Put clean foil on drip pan as high heat will cause old drippings to overheat and discolor (and sometimes flavor) the wings. When you put on the baking powder (always last), be liberal as you won't taste it and it helps dehydrate the skins and make it crispy. I use a spice shaker for the baking powder if that helps. One last thing; be careful when you open the lid on 460 as it is a HOT mofo, so stand to the side if you want eyebrows and arm hair. Don't wait to remove wings, as it will overcook the wings once the timer goes off in the high heat.

Bought this to try on some wings too. Anyone have a recipe using this?

Wife really likes lemon pepper since she doesn't like spicy food. If you want to use the BBQ sauce, just put salt and baking powder on them. Once they come off, toss with the sauce. That's how I do the honey teriyaki ones I make. Wings will stay crispy that way and not get gummy.
