Thanksgiving turkey.

Thanksgiving is around the corner.
For years my former boss his would gather a lot of friends, customers and coworkers past and present and fry 30-40 turkeys. It was a high light of the year and a wonderful tradition. A few years ago he passed a way and has left us searching for turkey prep ideas.
I have considered baking, smoking, frying, air frying. I would have to buy a fryer grease or air. I would probably only use it once year.
How will you prepare your bird?

The best turkey I've ever had, my brother roasted it on the grill over indirect heat--bird on one side with the burners off and the burners lit on the other side. It's been years ago and I haven't been able to talk him into doing it again lol.

I have been frying 2 turkeys every thanksgiving for about 20 years. Oil is expensive for one use per year but that’s what the family likes. It’s a lot faster than smoking one also.

We usually get together Friday or Saturday with the in laws and fry 2 every year. Setup a tent and tailgate in the driveway for a few hours. Neighbors in and out all day as well it is a good time.
