I like to use a pre stain application then stain to desired color, sand between coats if necessary.
I only use steel wool between poly top coat applications.
You can get matte or semi matte stains and poly top coats.
On stocks I like to apply about 6-10 coats of poly but have had some come out nice after two coats.
