My Bride wanted chicken again, so enough with South of the Border, went full tilt home made..I had left over chicken and whipped this up.

After all the taste test, I'm to full to eat but the Bride liked it...
 
My wife doesn't cook, so I understand where you are coming from. Glad Momma taught me to cook when I was a kid and being the oldest, got a lot of training. Also helps that I was the one she called when she couldn't figure out what something was missing. We are disappearing breed DD.
 
Nothing wrong with a sack full as long as you eat them before they get cold and soggy. Gives the system a good cleaning and you can still taste them the next day.
 
Back in my ABQ days I would make this quick soup.

Large can of Cream of Chicken soup, add small can of diced green chile and a small can of chicken breast meat....like a tuna can size. Heat it up and you have a passable green chile chicken soup. If you can score some fresh diced green chile...all the better.
