Smoked venison roast

about 3lbs of deer roast.silver skin trimmed,stuffed with a few garlic cloves.
Dry rubbed (thundering longhorn) smoked at 250 til 160 degrees inside.
It’s cooling now. Will post some dinner pics later when I carve it...

one of these days we need to do an odt grill out. just get together on a weekend in the spring,byog(bring your own grill) set up and cook out,hang out,and eat..
one of those a little from everyone on the plate...corn on the cobb,corn bread,pork,venison,all things winged,squirrel,rabbit,and anything else we can think of..
would be a lot of fun...

just my gas grill with one burner on. got it in the 250 temp range. rubbed the meat and threw it on the grill.made a pan out of foil and added apple chips to it. you can see the simple pan i made in the 2nd pic. had to change the chips 3 times before it was done,got the meat to the 160ish internal temp.took about 3 1/2 hours,just internal temp is what ya check..
it was a great meal....
