On a slightly more serious note, the reason Cajun food is so tasty is because they didn't have a lot of domestic meat or store bought luxuries. They were forced to make the most out of the least and they perfected to an art form like few other cultures. Granted, ready access to fresh game and seafood certainly assisted. It's hard to say they would have ever considered such a concept as 'non traditional' since that was exactly how they lived. Chicken andouille? I suspect it would have it's place.
