Smoked some whisker fish today to make dip and it turned out awesome as always. Anytime you have smoke and good fish things are heading in the right direction. Soaked all night in my brine mix before meeting some apple wood smoke.

When catfish is smoked the meat is most buttery. It's amazing! Some people say they have good results smoking it skin on but I have always stuck to skinless and an overnight brine.I'm not a catfish lover but boy those fillets be lookin' mighty tasty.........
