I bought a couple of pork butts at Kroger this week. The sell by/use by date is 3 August.
I cut open the cryovac bag and there was a smell.
I worked in pork processing plants for 4 years and I don't recall raw pork smelling that way.
My wife found some information online that said raw meat in cryovac bags can smell like that because of the lack of oxygen. The article went on to say, "Rinse of the meat and then let it dry off and it will be ok."
So I rinsed the meat off, put it in a colander to aid in air circulation, put it in a bowl and left it in the fridge overnight.
This morning, I got up and there is still a slight trace of the smell I found when I cut open the bag.
Should I rinse it again and do what I was going to do?* Or should I take it back to Kroger for a refund?
*I'm planning to make sausage with the meat.
