Hell... I quit doing turkeys along time ago. Never could make one taste good (to me) no matter if it was oven cooked, green egg smoked or fried. Just one bird I never cared for.Yeah, going to crank the oven all the way and give it a 8-10min sear when finished. Just hit 110deg so getting close...
Got a bird on the spit as well. 24hr Guinness beer brine is my go to for thanksgiving Turkey. Stopped frying them years ago when I got the rotisserie for the Weber.

This is very true, but it is a pretty ingenuitive method to make perfectly cooked foods. I use the sous vide and then finish meats on the grill or a hot cast iron pan to put a nice crust on it.Well, it aint no southern method/cookin pot.
