Leggs makes a bar-b-que rub that’s really good if you can find it,normally it’s with there sausage seasoning.
 
Slice it to about 3\4" ,then beat it down to bisket size steak. Roll n flour ,fry till golden brown with salt n pepper on both sides .

Might as well fry some green tomatoes while the grease is hot? Biscuit,tenderloin,tomato or fried green tomato, then gravy all over it.
