Oysters!

I picked up 1 1/2 bushels of oysters that came from NC on Wednesday and took them to camp Thursday. They were really good oysters. Perfect saltiness. I did a couple of sheet pans of Rockefeller and the rest we ate raw.

The local oysters here on the Ga coast are not singles. They are clusters. You have to steam them. They are really good. I usually get gulf coast oysters for singles. The seafood place where I get my shrimp had some of these when I bought shrimp a couple of weeks ago. I went ahead and ordered some for camp. First time having NC oysters. Ga has just started the framework for oyster farming legislation. There will be single oysters grown down here in local waters. They are already farming clams and they are good. I can't wait until local single oysters become available.
