My people call this a mess of collards

Let me know when you are eating supper and can actually hear your arteries hardening. Ha Ha Ha

Of course, I almost eat beef exclusively, so maybe that is just happening to me?
Hey I have a balanced and varied diet; beef, pork, venison, chicken, fish, seafood, turkey, various other critters and..... starch.
 
Dropped the beef for the most part after the heart attack.

That cajun crack is good on blackeyed peas, greens, eggs, hell just about anything where sweet heat is good.

Funny story (at least funny to me): several years ago I went to grocery store to get chow chow for beans. Refused to pay, whatever it was, for a jar from grocery store. So, I bought the ingredients and made my own. Turned out better than any store bought and I have been making it myself ever since. Btw: the ingredients bought to make my own cost much more than the $3 or $4 that the grocery stores charge for a jar.
