I been fortunate to eat at many hole in the wall Cajun establishments with true coon ass cooks from every race creed & religion. I can almost smell the boudin, jambalaya, gumbo, crawfish, etc. That’s some good eating!

Yep, that's where the term originated. A lot were french Canadians.

I knew the French origins but had no idea they migrated from Canada. I believe Quebec has or had the largest French population.

I never knew “coon ass” was considered racist. I thought it just Describes a group of people, not their race. Sort of like “hillbilly” or “Ridgerunner” or “yankee”. But I’m not the most tuned in person for racial advise either.

But nowadays I guess anything can be labeled racist and cause a problem by the whole bunch.

Every time by brother comes here from SE Texas, he makes sure to stop in LA and get us some Boudin and makes us some gumbo.

Quebec is French Canada which is home to Montreal. Been there many a time on a 8 hour ride from Boston. Outside of Quebec, Canada is somewhat like the USA and English speaking. Lots of Spanish up in the Toronto area too

I’ve only known a couple of Cajuns. I think they may be an entirely different species, existing outside of the typical racial paradigms.

I would also like to add that my Uncle John Aiken played goalie for the Boston Bruins. He played one game as the goaltender for the Canadiens and lost. He couldn't understand them but he let up quite a few goals. Back then, teams traveled with just on goalie and the home team covered back up for both teams. My Dad said it was crazy when the announcer called my Uncle out of stands.
