Going from W2 to 1099

I don't own the business. I'm working for someone else. What could I write off besides mileage and healthcare? My wife doesn't work if that matters

Is this a 9-5 type job at his location everyday? To me, I think I'd want to appear as a subcontractor type, largely unsupervised doing specific jobs at my own pace....not as a regular employee.

You are an employee requiring a W2 if you have specific hours. I would tread lightly. If you do decide to go 1099, put half of your check up to cover all the usuals (U&I, taxes, etc...), and get ready for an audit at some point.
