I start mine at a boil and reduce them to a simmer. As far as time it's all different but probably close to am hour simmer. How long did you ha e to boil it to get it tender? Every squirrel I’ve ate was like chewing a rubber band.

Just like a chicken wingmy favorite way to eat squirrel is out of the tree, cleaned, over a campfire on a stick with salt and pepper..
but dang that fried looks good.
I’m sorry that’s been your experience. I think it’s kinda like venison, somebody doesn’t take the time and effort to properly harvest, butcher, prepare and cook. IMHO the only difference is I can grub out with three instead of a whole bag full.Par boiled, lightly seasoned and fried with sweet mashed taters gravy biscuits and greens. High end restaurant quality cuisine at the house! Also if anyone is curious yes there is big difference between fox squirrel and grey squirrel. Fox squirrel is tough as a $2 steak while grey will melt in your mouth.
Never have tried that but i very well may.Ive had squirrel , skinned, feet cut off , gutted then cooked the ole fashioned way on a stick in a fire pit. Came out delicious
