Fresh Duck for Thanksgiving!

These 2 little guys were quacking and scratching around in the Pennsylvania dirt just a few short days ago. We did one last year, roasted in the oven just S&P and it turned out great! And the quart of duck fat you get is as good as gold for frying taters and such...will post pics from the big day ;)

Just order with a few days lead time. Ours were here in 3 days but they have other shipping options.

Highly recommend trying one for Christmas for a change. They aren't that hard to do and it's a nice change from Turkey. We've done Pheasant and Quail in previous years too.

I saw where you posted you buy from Carlton farms and I live in Fish Creek and have know the Carlton’s all my life. I go by there everyday on my way to work.
 
After 24 hours in the fridge, score the skin lightly (I know there's plenty of sharp knives out on the ODT!), and just add salt and pepper. Don't forget to snip the wing tips off, see next post...
