Left the bark on. it was bitter. Thanks for info. wont do that again.

Never leave the bark on because it will result in a bitter bite
 
Where do you find Black Cherry?


A lot of people call it wild cherry.


It's a weedy tree that you find along field lanes a lot. You definitely want to debark it. But seasoned it's a fine smoking wood. Good thing is that it doesn't take much because the trees are usually small.


it's a desirable timber tree, but usually doesn't get big enough in Georgia to have much value other than smoking.
 
Venison backstrap- marinade it in Lawry's Signature Steakhouse marinade-wrap with bacon, ensuring that the backstrap is completely covered. I usually smoke it with Pecan since I have a good bit available for free. How long in the smoker is entirely based on the setup but I tend to follow the recommended internal temp of 145 degrees for a whole (not ground) cut of meat.
