Ingredients:
(1) Assiago pork loin (Walmart)
(1) Sweet onion
(1) Red, yellow or orange pepper
(1) Small package of mushrooms
(1) tsp black pepper
(1) tsp Lowry's Seasoned salt
(1) can of Campbell's cream of mushroom soup
Optional toppings for serving:
- shredded cheddar cheese
- crispy fried onions
- sour cream
- jalepenos
Instructions:
- Set crock pot for 4 to 6 hours cook time.
- Place pork loin in crock pot.
- Slice onion, pepper, mushrooms and add to crock pot.
- Sprinkle in salt and pepper.
- Let cook for a minimum of 4 hours. When pork loin easily pulls apart with a fork, shred the pork loin in the crock pot, and stir well with the vegetables. Add the can of cream of mushroom soup, stir together well. Allow a few more minutes of cook time for cream of mushroom to get hot.
Serve in bowl, topped with shredded cheese, crispy onions and a dab of sour cream. Jalepenos if you like more spice.
