I'm the wierd guy that snatches all the hearts and livers from everyone at camp. Hearts get sliced like onion rings, dusted with garlic salt and pepper and done in a little bacon fat for about 35 seconds per side to mid rare. Livers make some fine boudin at home.
After school snack, go to the garden and pick whatever you want as long as you eat it all. My go to was a tomatoe, a jalapeño and some raw green beans.
Coat liberally with this and a bit of brown sugar. I usually slice jalapenos in half and insert a few in between muscle groups as well. prepare as usual and you will have a semi spicy treat that makes great tacos with a bit of a different flavor.
I'm thinking i need to pull about 5bls of deer trimmings out of the freezer, pick the last of the peppers and maters from the garden and get a pot started.
Rice is for curry and potatoes (of any sort or preparation) are only fit for cattle feed or to be shot from a potato gun.
But you nailed it with the onions and cheese!
