    One thing to do is after you dice up what ever meats, put it in small quantities in a chopper or blender for a few seconds. And never use ground beef. All of the meat should have been smoked or at least cooked on the grill.

    McCormick Jamaican Jerk seasoning. Put on a light coat of olive oil, sprinkle a heavy coat of JJS on and let it sit in the fridge for an hour so. Grill quickly on high heat.

    Yeah it could use a new gasket but it still seals pretty good. The screws are 4'' long with nuts and washers on the other end to raise the grill up higher when not using the plate setter.     = good butt in the afternoon. Smoking low , about 180 for 3-3.5 hrs then 275 for 3-3.5hrs Stuffed with japs. and rubbed with Butt Rub, pepper and mustard.
