    Save the good charcoal. You can cook bacon burnt ends over a pile of your old socks and boots. It’ll still be the best thing a human male can eat.

    I agree 100%. I use a BGE mainly but for weekdays or last minute decisions, a pellet grill beats a gas grill or an oven.

    It's an easy, laid back cook. Cut it into 1.5" - 2" cubes. Hit all 6 sides with your favorite rub. Cook low and slow (225-260) on a rack/ drip pan until internal is about 195. Transfer cubes into a foil pan and hit with a little more rub, bbq sauce, honey, butter... stir it around to coat all...
