I have a pellet grill so my wife can cook too. It's easier than dealing with a Big Green Egg....

It's an easy, laid back cook.
Cut it into 1.5" - 2" cubes. Hit all 6 sides with your favorite rub. Cook low and slow (225-260) on a rack/ drip pan until internal is about 195. Transfer cubes into a foil pan and hit with a little more rub, bbq sauce, honey, butter... stir it around to coat all...
embarrassingly enough, In 57 years (as of today) I've never knowingly eaten pork belly. I knew it'd be good, how couldn't it be? But I had no idea HOW good....
